Xingshisu, a kind of traditional lion-shape pastry in Guangdong Province, enjoyed overnight fame due to the innovation of young teacher Chen Xiaodong from a technical secondary school in the province.
Making Xingshisu is very complicated, with 10 procedures including shaping to frying. It usually takes four to five hours to finish, which is a test of both patience and skill.
However, it’s never a problem for the young cook born after 2000.
“It takes seven or eight hours to make a sugar art or chocolate work, so why not spend more time developing some valuable Chinese snacks?” said Chen.
Combining lion dance culture with traditional snacks will attract more young Chinese people and finally internationalize Chinese dim sum, the chef noted.
Under his instruction, ten students can make Xingshisu now.
As for the near future, Chen said he will continue to focus on the innovation of Chinese dim sum. Traditional Chinese elements such as Chinese Zodiac and phoenix will be integrated into Chinese food, said Chen.
